This Avocado & Beet Salad Can Help Even Out Your Complexion

If there’s anyone who knows about how filling your body with vitamin-rich and natural foods can be amazing for your skin, it’s makeup artist Wendy Rowe, who’s painted the faces of everyone from Sienna Miller to Daria Werbowy and Rosie Huntington-Whiteley, the former of which wrote the foreword to Rowe’s new book, Eat Beautiful, featuring 70 recipes created to enhance your skin, like her delicious zucchini pasta dish. Herein, we asked her to share another one of her all-time favorites.

 


Cilantro and Beet Salad with Avocado

SERVES 2

“I love fresh cilantro because it reminds me of Thailand and gorgeous Asian food, which always tastes so fresh and clean. I particularly like it in salads, such as this beet and avocado recipe I make all the time. The lively flavor of the fresh herb brings the recipe to life, and I know it’s helping to balance my blood sugar as I eat it, while improving the health of my skin. Beet, mint, and avocado are all great for the skin, making this dish a real powerhouse for the complexion.”

 

Ingredients:

3 medium-sized cooked beets, thinly sliced or cut into chunks
½ medium-sized red onion, thinly sliced
¼ cup mâche
1 tsp sherry vinegar
2 large handfuls of fresh cilantro, torn
large handful of fresh mint, torn
1 fresh red chile, seeded and finely chopped
1–2 tsp sweet chile sauce
sea salt and black pepper
flesh of 1 small avocado, sliced, to serve

 

Directions:

1. In a large bowl, combine the beets, onion, mâche, and vinegar.

2. Add the cilantro, mint, chopped fresh chile and sweet chile sauce (to take away the sharpness of the vinegar).

3. Season with a pinch of salt and pepper and serve with avocado slices.
