In case you’ve ever wondered what your life would be like if you were a Trinidadian former model, married to a Brooklyn restaurant mogul, with three gorgeous children, a loft in Williamsburg, and your very own hot-spot named after your grandmother that served Caribbean food (it’s a specific fantasy, but a legitimate one), wonder no more. Fallon and John Seymour are living that very specific fantasy. After meeting in the city twelve years ago (they were introduced by a club promoter mutual friend, casual), they’ve since been inseparable. And after the runaway success of John’s second restaurant, Sweet Chick (his first, a burger joint called Pop’s, was also huge) they decided to open a Caribbean restaurant, Pearl’s, that spoke to Fallon’s island roots.

And because no food-based love story would be complete without a little culinary cross-pollination, they devised two recipes for us that blend the best of Sweet Chick (fried chicken and waffles) with the tastiest bits from Pearl.
