An Octopus Recipe for Beginners

Never did we think that we would attempt to make an octopus dish in our own kitchen. Until now, that is. The lovely and charming Maya convinced us that all it takes is a little bit of courage (and the ability to handle octopus) to make this mouthwatering dish. Roll your sleeves up, because this dish is sure to impress the hell out of your friends or perhaps even your S.O.’s parents.

 


BRAISED OCTOPUS


 


INGREDIENTS:

6.5 lbs octopus
1 lemon (cut in half)
4 bay leaves
1 head of garlic (peeled)
3 corks
4 tomatoes (sliced in quarters)
1 red onion (cut into small pieces)
3 yellow potatoes (peeled and chopped)
parsley (take off stem)
1 handful of salt
1 pinch of peppercorn
olive oil
Occi marinade*

 

DIRECTIONS:

1. Into a large pot of water add the bay leaves, garlic, corks, and salt, bringing the mix to a boil.

2. Dip the octopus into the pot three times, and then put it directly into the mixture, cooking through for 35–45 minutes, or until tender.

3. At the same time, boil your potatoes until cooked through.

4. Allow the octopus to cool and then cut into small bite-size portions.

5. Using a circular stencil (if you have), place the octopus, tomato, potato, onion and parsley in a circle on a plate.

6. Drizzle marinade* and lemon over the dish.

7. Serve and enjoy!

 

*OCTOPUS MARINADE

 

INGREDIENTS:

500ml blended oil
15 cloves of garlic
1 chili pepper (cut in half)
5 bay leaves
thyme (to taste)

 

DIRECTIONS:


1. Put all ingredients into a large pot and bring to a boil.

2. Once everything has come to a boil, remove the pot from the heat. Keep covered until ready to pour over octopus and serve.
