To us, Instagram has become the equivalent of a menu with pictures, save for the fact that IRL, such a thing usually signals a questionable dining experience. Our point: it’s a visual representation of what we’re going to get. And when it looks pretty and most likely definitely delicious? We want it, like the unicorn latte! It’s literal eye candy—blue, pink, and topped with little rainbow-colored confetti, created by Brooklyn-based cafe, The End. Naturally, we had them show us how we could make it at home—you know, in case you’re craving some fancy Sunday morning coffee.

 


Unicorn Latte

“This psychedelic-looking drink is wonderful before a deep yoga session or meditation, served warm or chilled. Comforting yet entirely unique and loaded with restorative ingredients, the unicorn latte takes your wellness practice to the next level.”

 

Ingredients:

1 ½ cups raw cashews, soaked for 4 hours
3 ½ cups filtered water
1 vanilla bean, insides scraped out
2 oz cold pressed ginger
2 oz lemon
1 tbsp blue majik spirulina extract
1 tbsp maca root
3 medjool dates

 

Directions:

1. Mix all ingredients in a high-speed blender for one to two minutes until well blended.

2. Dust with spirulina powder to garnish.

3. Serve warm and frothy, or chilled on ice.

 

Makes about 3 ½ cups.
